Peanut Butter Baked Oatmeal


A family favorite that has a healthy side, but is still tasty enough to keep it in the regular rotation.


  • 3 cups quick cooking oats
  • 1/4 cup brown sugar
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 2 eggs
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1/2 cup peanut butter
  • 1/4 cup chocolate chips


Mix all ingredients together and stir well. Spread in a greased 9×13 pan or as muffins. Bake at 350 for 20-25 minutes.
