Glazed Carrots

Go ahead and file this one under the last carrot recipe you will ever need. If you have had Glazed Carrots at some fancy place, then you know how tasty these are. Don’t like carrots? Try these and you will.


  • 3 oz (85g) Butter
  • 2 lbs. 8 oz (1.13 kg) Oblique-cut Carrots
  • 1.5 oz (43g) Sugar
  • 12 fl. oz (350ml) Chicken Stock
  • Salt and Pepper to taste


  1. Melt butter in a large pan over medium-low heat
  2. Add Carrots, cover and sweat carrots for about 5 minutes
  3. Uncover, add sugar and liquid, bring to simmer over medium heat
  4. Cover and cook over low heat until tender, about 20-25 minutes
  5. Remove lid and continue to simmer to reduce liquid to glaze
  6. Salt and pepper to taste
