
Creamy Potato Soup
A simple hearty classic with all of our favorite ingredients. I would say this is perfect for cooler weather, but I think I will reach for this throughout the year.
Ingredients
- 1 lb. bacon
- 32 oz. chicken broth
- 4 large russet potatoes, peeled and diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 1/2 cups chopped spinach
- 2 cups heavy cream
- Salt and pepper
- Optional: Add 1 lb. Italian Sausage
Directions
- Cook and crumble the bacon, set aside
- Bring large pot of chicken broth to a boil, add potatoes and boil for 10 minutes
- While potatoes are boiling, saute onion and garlic set aside
- Once potatoes are tender, add bacon, onion, garlic and spinach to the pot with potatoes.
- Boil a few minutes until spinach wilts
- Reduce heat to low and add heavy cream
- Salt and pepper to taste; serve immediately
