Creamy Potato Soup

A simple hearty classic with all of our favorite ingredients. I would say this is perfect for cooler weather, but I think I will reach for this throughout the year.


  • 1 lb. bacon
  • 32 oz. chicken broth
  • 4 large russet potatoes, peeled and diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 1/2 cups chopped spinach
  • 2 cups heavy cream
  • Salt and pepper
  • Optional: Add 1 lb. Italian Sausage


  1. Cook and crumble the bacon, set aside
  2. Bring large pot of chicken broth to a boil, add potatoes and boil for 10 minutes
  3. While potatoes are boiling, saute onion and garlic set aside
  4. Once potatoes are tender, add bacon, onion, garlic and spinach to the pot with potatoes.
  5. Boil a few minutes until spinach wilts
  6. Reduce heat to low and add heavy cream
  7. Salt and pepper to taste; serve immediately
